Lasagna with Bolognese sauce is a classic of Italian cuisine, but there are many different variations around that are worth trying and eating. This is one of them: seafood lasagna. The ingredients are for eight people.
200gr Mussel
200gr Hake
200gr Crawfish
200gr Clams
200gr cod
2 cloves of garlic
One tin of plum tomatoes
2 sprigs of parsley, chopped
4 tbsp extra-virgin olive oil
Half glass of dry white wine
Salt and freshly ground black pepper
400gr béchamel sauce
500gr lasagna sheets
Sauté the garlic in the olive oil for 5 minutes on a low heat, then add the plum tomatoes and cook for fifteen more minutes. Add the shelled mussels and clams to the sauce and cook for more ten minutes. Give it a stir and add the parsley, then add the crawfish and cook for five more minutes, then take off the heat. Cook the hake and the cod in boiling water for about 20 minutes, then drain and finely chop it. Sieve the cooking water and keep it aside. In a large saucepan, heat the béchamel sauce ,then add the white fish, and let it go for ten minutes, then add 4-5 tbsp of the cooking liquid if the fish. The last thing before you start building your lasagna will be cooking the pasta sheets in plenty of boiling salted water according to the packet instructions. Drain the sheets and lay them on a dry cloth.
Preheat the oven at 160°C. Grease the bottom of a casserole with olive oil and cover with: pasta sheets, one layer of sauce, one of white fish with béchamel. Repeat the operation until you have finished the ingredients or have reached the top of the casserole. Finish with the tomato sauce. Bake in the oven for 30-35 minutes.
